I’m one of those people who wakes up hungry every morning. You people who skip breakfast.. no comprendo. I tend to stick to a routine when it comes to breakfast. In general, I like my standard scrambled eggs and bacon.. but some days you just gotta change it up. Enter… PANCAKES!
I’ve been wanting to try these OMG Pancakes from Carrots N Cake for awhile now and I finally gave it a go! Not only were they super delicious, but you can make up a dozen or so, fridge them, and nuke ’em in the AM for a fast and healthy breakfast. Combined with one of my faves, Island Coconut coffee, it was a great way to start the day!
1/4 cup honey almond butter
1/4 cup coconut flour (you can use almond flour as well)
1/2 tsp baking powder
1/2 tsp vanilla extract
This couldn’t be easier.. put all ingredients in food processor or blender until thoroughly mixed and smooth. Pour pancake sized batter into skillet sprayed with non-stick spray. Proceed per usual for pancake flipping.
