Today was supposed to be my designated “Rest Day”… but I woke up this morning feeling kind of “blah” so I decided to go for a run hoping the endorphin’s would turn my mood around. Sure enough, about 20 minutes in I could feel the good vibes kicking in. It was a perfect cool spring morning for a 4 mile run. Hey, if you’re going to have a vice I guess running is better than other alternatives right??
When I got home I dove into my usual breakfast routine of Scrambled Eggs and Bacon. I find that the less thinking in the morning, the better. This little routine I’ve got going only takes me about ~5 minutes tops.
I always start by adding a spoonful of coconut oil to a skillet (have you jumped on the coconut oil bandwagon yet??).
I then toss a veggie in there to soak up some of that oil.. my current kick is spinach but I’ve also done pepper/onion combos that are bomb.
Next I add 2 eggs and do the normal scrambled egg thang.
I nuke some turkey bacon, dose the eggs in sriracha, and ta-da! 5 minutes later.. breakfast is served.
Does anyone else remember back in high school before taking the SAT’s all of the students/parents/teachers insisted you eat a “Brain Breakfast”? Which typically included bacon/eggs/toast? Maybe that was just me…
